CUSCO, PERU. Every June, Cusco is overflowing with streams of colours and music. This is when the city celebrates the traditional ceremony of the Corpus Christi.
The festival, which happens on the 60th day after Easter Sunday, represents the arrival to the city’s Cathedral of the fifteen saints and virgins to “greet” the body of Christ.
It is a great occasion to learn about the region’s traditions and enjoy some typical food such as the “Chiriuchu,” which in quechua means “cold meat,” and includes an ensemble of different meats: guinea pig, chicken and sausages with toasted corn, cheese, seaweeds and other ingredients, all flavoured with aromatic spices.
